Well nothing exploded, which is always a good sign.
The 2GB of DDR, Athlon 3000 CPU and 2x120GB SATA drives all turned up this morning as I was chatting to a contact about some outstanding work. I had a brief look over the CPU leaflet (It's a retail box, so it has instructions) and basically just bunged everything in. On powering up there was the soft sound of air being drawn through the PSU. No beeps, no alarms, nothing.
Having never done a RAID setup before there was some fiddling about. First off the two drives were not picked up because they were on the wrong SATA connectors at the mainboard end. Next up I went into the BIOS and let it set up the striped array itself, so no problems there, and finally I had to copy the files from the mobo CD onto floppy so that the Windows2000 install could find them. Aside from not knowing I had to do this last bit, it all went swimmingly well.
I'm currently 74% through the 240GB drive format. It's taking... quite a while.
Some benchmarking scores...

The machine is running nicely and I've done a couple of benchmarking bits at Mr.Foo's suggestion.
